Camping Breakfast Skillet – Eggs, Potatoes and Sausage
How to make a camping breakfast skillet of eggs, potatoes and sausage in just one pan over a campfire or a camp stove. So easy, hearty and delicious.
Like most people that camp, we like our meals to be easy to make but delicious. Bonus points if it can be all made in one pot.
This egg breakfast skillet checks all those boxes and is a great way to start to your day.
Roger is usually our breakfast chef so he is the one that came up with this recipe.
Actually, he was making it with just eggs and sausage but I added the sliced red potatoes so I guess I can take the credit for this.
All joking aside, breakfast is usually Roger’s domain so while he mans the induction cooktop, usually outside, I ready the OJ and toast.
Camping Breakfast Skillet Ingredients

- 4 red potatoes, sliced thin
- 1/2 cup chopped white onion
- 4 large eggs
- 4 thick slices of Neese’s sausage, or ground sausage
- salt and pepper to taste
- olive oil
We used to cook in a heavy duty saucepan on the induction cooktop but Addison gave her dad a cast iron skillet for Christmas last year and it’s been a game changer.
We take it with us when we go camping now and it works great with the induction cooktop. (If you’re looking for easy tips on how to clean a cast iron skillet, you can check it out here.)
So, all the prep you need to do is slice up the cleaned red potatoes, cut some thick slices of Neese’s sausage and chop up the onion.
Once everything is chopped and sliced you can start cooking.
Roger likes to cook the sausage first, then he removes it from the skillet and cooks the onions and potatoes.
To speed up the process of cooking the potatoes, he adds just a bit of water to the pan and covers it for about 10 minutes.
Once the potatoes are soft, he adds the cooked sausage back to the skillet along with the slightly beaten eggs.
While the eggs finish cooking, I’m making the toast, because no skillet breakfast is complete without toast…am I right?
That’s it! 20 minutes and a few ingredients and we have hearty and delicious camping skillet breakfast. Not a bad way to start your day when you’re out on the road camping.
We usually have plenty leftover to make for breakfast another morning. Just heat and eat (with toast of course).

How to make a delicious and hearty camping skillet breakfast with eggs, potatoes and sausage. This is a quick and easy one skillet meal that will feed a hungry family.
Ingredients
- 4 red potatoes, sliced thin
- 4 slightly beaten large eggs
- 1/2 cup chopped onion
- 4 thick slices Neese's sausage or ground sausage
- salt and pepper to taste
- 1 tbsp. olive oil
Instructions
- Cook sausage on medium until brown
- Remove sausage, set aside
- Add olive oil and chopped onions to hot skillet
- Cook until onions are translucent
- Add sliced potatoes, salt and pepper
- Pour 2 tablespoons of water in skillet and cover for 10 minutes
- Uncover and stir potatoes and onion
- Add cooked sausage and slightly beaten eggs
- Cook until eggs are done
- Enjoy!
